Papite ki chutney or papaya chutney is a papaya relish made with fresh ripe papayas. This no onion no garlic recipe is usually made and consumed during the Navratri period in India when many people fast.
Papaya can be replaced by any other fruit like guava or apple. You can even add pomegranate to this recipe. Addition of Rock salt ensures that this recipe can be consumed on fasting days.
Ingredients used for making papaya chutney or papaya relish:
- Papaya: Use firm, fresh, ripe papaya to make this simple, easy and delicious papaya relish.
- Green chilies: Since ripe papayas are sweet, we have added few green chillies in this chutney recipe.
- Sugar: Some sugar is also added in this recipe. But if the papayas are sweet, then you may decrease the sugar quantity.
- Oil: Any type of cooking oil preferably peanut oil or canola oil can be used in tempering the chutney.
- Salt: In this recipe, use only rock salt also known as sendha namak.
- Coriander leaves: Few finely chopped coriander leaves are added for garnishing the papaya relish.
Steps to make papite ki chutney:
- Heat oil in a pan.
- Add slit green chillies and temper them.
- Add the chopped papaya pieces and toss well for a minute.
- Gently add salt and sugar and mix. Do not over cook.
- Add the chopped green chili and coriander leaves for garnish.
- Serve with kutte ke pakore.

- 4 tablespoon sugar
- 2 teaspoon oil
- To taste Rock salt/Sendha Namak
- 1-2 teaspoon green chilies finely chopped
- 1 tablespoon coriander leaves chopped
Instructions
- Heat oil in a pan.
- Add slit green chillies and temper them.
