The Moringa leaves recipe mentioned in today’s post is an authentic Goan recipe that is “maskachi bhaji” means drumstick leaves stir fry. I have added jackfruit seeds to this moringa recipe. You can even add peanuts or any types of nuts instead of jackfruit seeds.
Moringa leaves or drumstick tree leaves are an extremely rich source of antioxidants and are extremely good for health. People in India make variety of dishes with moringa leaves.
What goes in making no oil moringa subzi?
- Moringa leaves: moringa leaves aka drumstick leaves are the star ingredient in this recipe. Use fresh leaves and wash them thoroughly before cooking.
- Jackfruit seeds: Jackfruit seeds are added in this moringa recipe. However, if jackfruit seeds are not available, then use peanuts or any type of seeds.
- Dry red chilies: Dry red chilies are added in this recipe. You can add green chilies instead of dry red chilies. You may also add red chili powder if green or dry red chilies are not available.
- Onion: Little amount of red onion is added in this recipe. Do not add onion if you are making a no onion no garlic recipe.
- Coconut: Freshly grated coconut is added in this recipe.
- Jaggery: Little jaggery is added to enhance taste. Jaggery can be substituted with sugar if it is not available.
- Turmeric powder: Turmeric powder is necessary in any Indian recipe.

How to make moringa leaves stir fry?
- Soak the jackfruit seeds in hot water for 30 minutes. Crack them into small pieces.
- Wash the moringa leaves and separate the leaves from the stem.
- Chop them fine and keep aside. You can run them in a mixer for one round if you find it difficult to chop.
- Add the chopped moringa leaves, cracked jackfruit seeds and dry red chilies to a pressure cooker and pressure cook them by adding sufficient water for 5-6 whistles.
Switch off and wait for the cooker to release the pressure. - In a separate pan, add 2 tablespoon oil and fry onions till they turn pinkish.
- Add the contents from the pressure cooker carefully without adding the access water (if any) from the pressure cooker. Add freshly grated coconut and mix well.
- Add jaggery and turmeric powder and mix well.
- Add salt to taste.
In some countries, people have moringa leaves juice on daily basis. It is believed that these drumstick tree leaves help to ward off numerous diseases, helps to stabilize blood pressure and control diabetes.

You can dry the jackfruit seeds in sun for 2-3 days and then preserve them for further use. Also, if you dry them in the sun, it is easy to peel the seeds.
Mom makes muskachi bhaji without peeling the jackfruit seeds. I preferred peeling them before adding them in this moringa recipes Indian.
Moringa Leaves Stir Fry
Ingredients
- 1 bunch moringa leaves
- 7-8 jackfruit seeds
- 3 dry red chilies
- 1 medium sized onion finely chopped
- 3 tablespoon freshly grated coconut
- 1 teaspoon jaggery
- 1 teaspoon turmeric powder
- To taste salt
