Today’s dish is drumstick subzi which is known as sangachi bhaji in Goa. My mom taught me to prepare this sangachi bhaji during my recent trip to Goa. Dad being a pure vegetarian, mom prepares different types of veg dishes like drumstick stir fry specially for him. Dad loves this dish. My hubby too loves a lot of vegetarian dishes as they are good for health. This drumstick recipe is simple to prepare.
How to cook drumstick stir fry?
Preparing this sangachi bhaji is very easy. Just peel the drumsticks and cut into 2 inch long pieces. In a pan, saute onions till pinkish, add tomatoes and other ingredients. Keep it covered. The sangachi bhaji gets done in 20 minutes. Adding jaggery and grated coconut is optional.
Ingredients for drumstick stir fry:
- Drumsticks – The fruit of the moringa tree is drumstick. Drumsticks as you know are very good for health. They are blood purifiers and also give a good glow to the skin.
- Onion
- Green chilies
- Grated coconut
- Tomato
- Jaggery – Sugar can be used if jaggery is not available.
- Turmeric powder – Also known as curry powder. Turmeric powder adds colour and flavor to the recipe.
- Oil

Drumsticks are a part of the moringa tree which is also called as magic tree. In Goa, moringa tree is grown in home gardens. The long slender seed pods are known as drumsticks. Every part of the moringa tree can be used in cooking and has medicinal properties. The flowers are used to make cutlets, leaves and seed pods are used to make curry or stir fries. The roots are used in making condiments.
Sangachi Bhaji / Drumstick Stir Fry

- Pan
Ingredients
- 4-5 Drumsticks
- 1 medium onion - chopped
- 2 green chillies
- 1/4 cup grated coconut
- 1/2 medium sized tomato chopped
- 1 tablespoon jaggery
- 1 teaspoon turmeric powder
- 1 tablespoon oil
- 1 cup water
- To taste salt
Instructions
- Peel and cut the drumsticks into 2 inch pieces.
- In a pan, fry onions on low flame till they turn pinkish.
- Slit the green chilies length wise.
- Once they turn pinkish, in an order add green chilies, chopped tomatoes, drumsticks, turmeric powder and grated coconut.
- Add water and mix well.
- Add salt to taste and cover the pan by a lid. Let this simmer for 10 minutes.
- After 10 minutes, open the pan and give a nice stir. Add 1/4 cup water if needed.
- Cover the pan and cook for further 10 minutes.
- Check if drumsticks are cooked by pressing them slightly.
- Add salt to taste and stir nicely.
- Serve hot with rice or rotis.
