Travel anywhere in India, you will find vada pav in every nook and corner. It is very famous in Pune and Mumbai and is a popular street food in Maharashtra. Vada pav is also known as Indian burger.
Recipe to make vada inside pav or bun looks complicated. But it is very simple. You just need to make these potato vada is also known as aloo bonda. Then keep the chutneys ready. Vada pav is also known as Indian burger and is a popular street food in Maharashtra. Vada pav is a simple recipe in which a deep fried spicy potato dumpling is placed inside bread and is served with different types of chutneys.
How are Indian burgers different from Hamburgers?
Vada pav can also be called Indian burger. Instead of burger buns, we take pav. Instead of sauces and mayo, we add chutneys and make it spicy by adding deep-fried green chilli. Finally we add vada instead of patty. So next time you visit India, do try this famous recipe. You will surely love it. You can also try other Indian street food like puran polis, onion pakodas, etc.

Ingredients: Prep. Time: 1 hour, Makes: 5 Vada Pav
- 5 bataat vada (See instructions for recipe)
- 5 laadi pav / bread
For Green Chutney:
- 1 cup coriander leaves, chopped
- 3 garlic cloves
- 1 teaspoon tamarind pulp
- 2 green chillies
- Salt to taste
For garlic chutney:
- 4 tablespoon chopped garlic cloves
- 1/4 cup dried grated coconut
- 3 tablespoon red chili powder
- To taste, salt
For Fried Green Chilies:
- 10 Green Chillies, with stem intact
- 2 pinches salt
- 1/2 cup oil for deep-frying

Let us keep the various ingredients ready:
Pav:
You can get laadi pav from bakery or store. Else you can follow my pav recipe and bake bread at home.
Vadas:
Prepare the vadas. Follow this bataat vada recipe of mine to prepare crispy vadas.
Green chutney:
Add all ingredients for green chutney mentioned in ingredients in a blender along with 2 tablespoon water and make a thick chutney or paste. Keep aside.
Red garlic chutney:
- Heat a kadai and add oil.
- Add chopped garlic and sauté till garlic releases nice aroma.
- Add dried grated coconut and mix well. Switch off the gas.
- Add red chili powder and salt and mix.
- After cooling, add it to mixer and dry grind.
- If it remains after using, you can store in an air-tight container and keep in fridge.
Deep fried green chillies:
- Slit the green chilies, keeping stem intact.
- Apply salt and keep aside for 10 minutes.
- Heat a kadai and add 1/2 cup oil.
- After oil gets heated, deep fry the green chillies one by one.
Finally let’s assemble vada pav:
- Slit the laadi pav.
- Apply 1 tablespoon green chutney. Next sprinkle 1 tablespoon garlic powder.
- Keep the bataat vada and apply 1 teaspoon garlic chutney.
- Keep 1 or 2 deep-fried green chillies.
- Close and serve.
