Broccoli rice was a recipe which I made as per my daughters request. I made this recipe long back before the summer vacations started. This is a recipe which usually goes in my daughter’s lunch box. She normally tells me what she needs in her lunch box for the next day and I keep the dish ready as per her wishes. This might be a bad practice but I really love to cook for my family.
Broccoli is rich in folic acid, omega 3 fatty acids and vitamin C. It is a powerful antioxidant and good source of dietary fiber. The broccoli rice recipe is a perfect dish for the kid’s lunch box. It is a simple recipe and turns very tasty. You can also customize this recipe by adding other veges like carrots and peas. My daughter demanded broccoli rice, so this was made for her.
I love the way Miss KK shows off her lunch box in school everyday.
Her friends love tasting her lunchbox due to the variety of dishes I pack for her. Some of her classmate’s moms ping me on WhatsApp and ask for recipe of the dish that I cook. They say that their kids loved Miss KK’s lunch. I have started packing extra lunch for little Miss KK as her friends love it.
As kids grow, their taste buds start developing. It is very important to cook and feed them healthy home cooked food. I also make soya pulao, pea’s pulao and veg fried rice for Miss KK’s lunch box. Try out the broccoli rice recipe mentioned below. Remember to make it with basmati rice. The fragrance of basmati rice makes the broccoli rice smell and look good. Do not completely cook the broccoli. Let it remain slightly crunchy.
I cooked rice for this recipe using an electric rice cooker. You can even cook it with a normal pressure cooker or in a deep bottomed utensil. Also check broccoli and mushroom stir fry, broccoli soup, and rava fried broccoli and broccoli-aloo paratha.
