Goan prawn pulao is a quick and easy Indian rice recipe made with shrimps and coconut milk. This is a mildly spiced pulao recipe with prawns and is kid- friendly too. Goan prawns pulao recipe mentioned below is a one pot meal. I have cooked rice, prawns and vegetables together with coconut milk in a single utensil. Due to this the shrimp pilaf becomes extremely tasty and healthy.

Ingredients to make Goan shrimp pulao:
- Prawns: Prawns or shrimps of any size can be used. I used large prawns and chopped them into 2 parts to use in this prawn pilaf recipe.
- Spices: Whole spices like bay leaves, black peppercorns, cloves, star anise, cinnamon, green cardamom are used in this non-veg pulao recipe. Also red chili powder and turmeric powder are applied to prawns for marination.
- Rice: Basmati rice is used to make this delicious pulao in coconut milk.
- Coconut milk: I have used 200 ml canned coconut milk in this recipe. You can extract thick coconut milk at home from freshly grated coconut and use in this recipe.
- Vegetables: Vegetables like red onion, tomato, capsicum and green peas are used in this rice recipe. Addition of green peas makes the recipe authentic Goan.
- Ghee: I have used ghee to make this pulao. You can even make it in butter or oil.
- For green gravy: coriander leaves, green chilies, ginger and garlic are used to make green gravy to add in this prawn pulao Goan recipe.
- Stock cube: We Goans love to add stock cubes like Maggi stock cubes while cooking pulao’s or chicken curries. In this recipe I have added 1 Maggi stock cube. However, it is optional.
- Mint leaves: Few mint leaves may be added for flavour. This is also an optional ingredient.
How to make Goan prawn pulao?
- First, we must marinate the prawns by applying red chili powder, turmeric powder and salt.
- Next step is to wash rice and keep it aside.
- Then we make green gravy by blending together, chopped coriander leaves, green chilies, ginger and garlic.
- To make one pot rice recipe, we heat a deep bottomed utensil, add ghee and spices. After spices turn aromatic, add onion, minced ginger and garlic, tomatoes, capsicum and green peas and cook till vegetables are cooked.
- After vegetables are cooked, add marinated shrimps and cook slightly. The prawns will continue cooking when we are cooking rice. So do not overcook prawns. Then add green gravy, coconut milk and stock cube.
- Add rice, chopped mint leaves and salt to taste and mix gently. Else the rice might break.
- Cook till rice gets cooked. After rice is cooked properly, fluff it using fork.
- Garnish with chopped coriander leaves.
How to serve authentic Goan prawn pulao?
This Goan style pulao with prawns or shrimps turns yummy and can be served as it is. You can make prawn pulao at home for it for any occasion like birthday parties or small get-togethers along with chicken xacuti, Goan chili chicken, rava fried prawns, rava fried king fish, caramel pudding and jelly custard shots. Some people also love to have prawn pilaf with vegetable raita.

Tips to cook prawn pulao in Goan style:
- You may cook prawn pulao without the addition of green gravy.
- Prawns get cooked very fast, so do not overcook it. Prawns will get cooked with rice too and if over-cooked, it will get hard and rubbery.
- You may also add carrot julienne and French beans in this shrimp pulao recipe. You may also cook it without adding vegetables. Just cook it with onion, tomatoes.
- You may extract thick coconut milk at home and use it in this recipe.
- Instead of ghee, oil or butter can be used.
- Usually for cooking rice in one pot, we add double the amount of water. That is for 1 cup rice, we add 2 cups water. However, in this recipe, I added half cup less water as 1 cup coconut milk is added.
Goan Prawn Pulao With Coconut Milk
Ingredients
- 15 Prawns
For marinating:
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- ½ teaspoon salt
For green gravy:
- 1 cup coriander leaves chopped
- 3 green chilies
- 5 garlic pods
- ½ inch ginger
For making Goan prawn pulao:
- 1 and ½ cup basmati rice
- 1 cup thick coconut milk canned
- 2 medium sized onions sliced
- 2 medium sized tomato chopped fine
- 1 capsicum julienned
- ½ cup green peas
- 1 stock cube
- 1 tablespoon garlic minced
- ½ tablespoon ginger minced
- 5 black pepper corn
- 1 inch cinnamon
- 2 bay leaves
- 3 cloves
- 1 star anise
- 4 tablespoon ghee
- To taste salt
- Few mint leaves chopped
- 2 and ½ cups water or as needed to cook rice
Instructions
- De-shell and devein the prawns. Marinate them by applying red chili powder, turmeric powder and salt and keep it aside for 20 minutes.
- Wash rice and keep aside for 20 minutes.
- Add coriander leaves, green chilies, garlic and ginger in a mixer bowl and grind or blend into a thick smooth paste.
- Heat a deep bottomed pan or kadai, add ghee and add spices (bay leaves, black pepper corns, star anise, cloves and cinnamon) till they turn aromatic.
- Add onions and sauté onions till it turns pinkish.
- Add minced ginger and garlic and sauté till garlic becomes aromatic.
- Add chopped tomatoes and sauté till tomatoes become mushy.
- Add capsicum and green peas and cook for 5 minutes by closing the pan.
- Add marinated prawns and cook for 2 minutes.
- Pour the green gravy from the mixer and mix well.
- Cook for 5 minutes and add the stock cube.
- Pour coconut milk and cook for 2-3 minutes.
- Add washed rice and gently mix the rice.
- Add enough water to cook the rice. I added 2 and ½ cups water for 1 and ½ cup rice. I want rice to be cooked aldente. If you want softer rice, you can add water in 1:2 ratio. i.e. for 1 cup rice add 2 cups water.
- Add salt to taste and chopped mint leaves.
- Cook for 20 minutes or until the rice is cooked.
- After rice is cooked properly, fluff it using fork.
- Garnish with chopped coriander leaves.

I made this for dinner last night. Everyone at the table loved it. I have three kids all of them fussy eaters hence skipped the peas and peppers but I think I’d have loved it with those additions too.
The only thing I did different was fried the greek gravy after the onions and then added the tomatoes and then the prawns.
