Ladyfinger rava fry | crispy okra rava fry | rava fried bhindi is an easy and quick appetizer or snack recipe. Ladyfingers are spices and are coated with rava or semolina and shallow fried on tava till crispy. These are usually served as a side dish during lunch or dinner.
This crispy bhindi fry recipe is made in many parts of India in a slightly different way as mentioned in kurkuri bhindi. We Goans make this bhendi rava fry along with a vegetarian meal. Lady finger is known as bhendi in Goa and this okra fritters are known as bhenyachyo fodi or bhendi fodi.
These Goan style ladyfinger fry tastes yummy. I normally make these as an accompaniment with rice and vegetarian curries. I have always seen people eating kurkuri bhendi which are deep-fried in oil. The ladyfinger crispy fry recipe mentioned in today’s blog post is healthier as it does not require much oil. It is cooked by shallow frying and not by deep frying. Also check okra stir fry recipe.

The recipe to make these crispy bhendi is simple. First, I sliced the ladyfingers length wise and then I applied the spices as mentioned in recipe below. Then they were coated with rava or semolina to which a bit of spices and salt is added. It is then shallow fried in a pan to make these delicious Goan style rava fried ladyfingers or rava fried bhendi. I have used rice flour in this recipe. But it is optional. If you don’t have rice flour handy, you can coat the ladyfingers with semolina(rava) too. The taste will not be altered by a great extent too.
What goes in making ladies finger dry fry recipe?
- Ladyfingers: Use fresh, tender ladyfingers. You can check if the ladyfingers are tender by gently breaking a bit of it from the tail portion. If it breaks easily, it is tender.
- Spices: We use simple and readily available spice powders like red chili powder and turmeric powder in this okra fry recipe. These spice powders are available in any Indian grocery store.
- Flour: Rava or semolina is used in this recipe for coating the okra. Addition of rice flour is optional, but it makes the fried okra crispy.
- Oil: Any type of cooking oil like canola oil, sunflower oil, coconut oil or mustard oil can be used to shallow fry ladyfingers.
How to make crispy okra fry with rava or semolina?
- In a small mixing bowl or plate, add rava, rice flour, chili powder, turmeric powder, and salt. Mix and keep aside.
- Wash the okra and pat dry. Cut the ladyfingers lengthwise into 2 pieces after chopping off the head/stem. If the ladyfingers are too big in length, cut them into halves first horizontally then cut vertically so that you get four pieces.
- Apply chili powder, turmeric powder and salt to the ladyfingers and keep aside for 10 minutes. You can even apply a teaspoon of garam masala. This is optional and it adds extra taste to this delicious dish.
- Roll and coat the ladyfingers in rava and rice flour mixture.
- Heat a frying pan and spread oil.
- Arrange the rava coated ladyfingers inside the frying pan one by one.
- Spread 1-2 tablespoon oil on top of the rava coated ladyfingers. Shallow fry on low flame by covering the frying pan.
- After 10 minutes, flip to the other side and fry for another 10 minutes.
- Check whether the ladyfingers are cooked. When they turn crispy, it is time to switch off the gas/heat.
How to serve these Goan style lady finger fry?
Serve these crispy bhindi fry recipe with rice, radish curry, pumpkin subzi, 3 bean salad and papad for a Goan meal. You can also serve it as a side dish with jeera rice and moringa dal or with lemon rice. These can also be served as an appetizer or snacks.
