Mexican rice is a one pot rice which can be made easily at home. This easy rice recipe is flavorful, tastes delicious and is perfect for weeknight dinners.

- Vegetables: Vegetables like carrot, red colored bell pepper, red onion, green peas, and sweet corn kernels are used in this recipe. Apart from these garlic and jalapeno or green chili have been used.
- Seasoning: I have added black pepper powder or ground black pepper, cumin powder or ground cumin, red chili powder or paprika for seasoning.
- Sauce: I have added readymade tomato puree in this recipe.
- Cilantro: This is used for garnish.

Use long grained or Basmati rice to make this easy rice recipe.
How to make Mexican rice recipe?
- Wash Basmati rice under running tap water 2-3 times, drain and keep it aside for minimum 30 minutes.
- Heat a pan and add oil. After oil gets heated add onion and sauté till onion turns pinkish.
- Add garlic and fry till garlic turns aromatic.
- Add washed rice and stir well till the rice starts getting brownish.
- Add vegetables like chopped carrots, chopped bell pepper, green peas, green chili or jalapeño and sweet corn.
- Add seasonings like black pepper powder, cumin powder, paprika or red chili powder, tomato puree or sauce and salt to taste and mix well.
- Add vegetable stock or water and mix well. If needed add little more salt after tasting the broth.
- Cover the pan with a lid and cook covered for 20 minutes on low flame till the rice is cooked and all water is absorbed.
- Switch off the heat and let the rice sit covered for 5 minutes.
- After 5 minutes, using a fork or spoon fluff the rice gently.
- Garnish with finely chopped cilantro.
- Serve hot.
