Goan style okra stir fry, also known as Goan lady finger stir fry or bhendyachi bhaji, is a simple and easy recipe. If you are wondering whether you can add okra to stir fry, the answer is yes! This delicious okra stir fry can be made with just a few simple ingredients available in your pantry.
This stir fry okra Goan style is a perfect dish for a busy weekday. I have cooked ladyfinger subzi without water. It can be served with rice or chapati. I have added kokum (Garcinia indica) to make non-sticky okra stir fry and super delicious.
Goan cuisine uses simple ingredients easily available in the pantry. You will be surprised as to how delicious this bhindi bhaji turns with minimum ingredients. I have not added any masalas to bhendyachi bhaji.
The Goan ladyfinger stir fry tastes delicious with the taste of tender okra, curry leaves, green chilies, and kokum petals. Addition of kokum petals removes sliminess from okra while frying and imparts delicious flavor and beautiful colour.

What goes in cooking Goan stir-fry okra recipe?
- Okra: Use soft and tender okra in this bhendyachi bhaji Goan recipe. We normally add Goan okra which are long and light green in colour. But you may add any variety of ladyfingers.
- Onion: I have added red onion in this recipe. You may add any type of onion.
- Chilies: Green chilies are added in this bhindi subzi recipe. You may even add dry red chilies.
- Seasoning: For seasoning, I have used simple ingredients like mustard seeds and curry leaves. Some people add cumin seeds too.
- Coconut: Coconut is the star ingredient in every Goan recipe. In this recipe, I have added freshly grated coconut. You may add little bit of desiccated coconut if fresh coconut is unavailable.
- Kokum: Kokum also known as Garcinia indica is the secret ingredient in this Goan recipe. It is kokum which removes sliminess of okra and makes it delicious. You may add little lime juice if kokum is unavailable but the taste and colour will vary significantly.
How to cook okra stir fry?
- Wash and dry the lady fingers. Chop the head and cut into slices.
- Heat a kadai and add oil.
- After oil gets heated, add mustard seeds, and let them flutter.
- Add curry leaves and fry for few seconds.
- Add finely chopped onion and sauté till onion turns pinkish.
- Next, add chopped okra or ladyfingers and stir well.
- Add salt and stir. Addition of salt ensures that okra gets cooked faster.
- Add kokum petals, slit green chilies, and stir.
- Addition of kokum petals removes the sliminess of okra, imparts flavour and colour.
- Cover and cook for 3-4 minutes on medium flame. Also stir occasionally to ensure that okra does not stick to the bottom.
- Add grated coconut and mix well.
- Cook till okra is soft and tender.
- Delicious Goan style okra stir fry is ready. Serve hot.
How long to stir fry okra?
Okra is a healthy and tasty vegetable. Everyone thinks that it is slimy and difficult to cook. But the reality is that if we cook it properly it turns delicious. Okra takes just 8-10 minutes to stir fry. Okra is done as soon as you see it turning fork tender.
Tips to ensure that okra does not get slimy and sticky while cooking:
- Always wash okra and pat dry using a kitchen towel.
- Addition of souring agent like kokum also known as Garcinia indica in English removes sliminess of ladyfingers.
- You may add lime juice if kokum is not available.
- If you have an air fryer, just air fry okra for few minutes and then add it to kadai after sautéing onions to make this stir fry. This will also remove the sliminess. But ensure that you chop the okra at least ½ inch in size else it will turn dry and crisp.

- 1 medium onion finely chopped
- 2 green chilies slit
- 1 teaspoon mustard seeds
- 6-8 curry leaves
- 2 tablespoon coconut grated
- 4 kokum petals
- 2 tablespoon oil
- ¼ teaspoon salt or as per taste
