Carrot, beetroot and radish sandwich is a healthy breakfast sandwich for kids and family. Grated carrot, beet and radish are mixed and added as a stuffing inside the sandwich along with cheese and butter. Loaded with vitamins, this cheesy grilled sandwich with vegetables is perfect to serve for breakfast and to kick-start your day.
I try lots of innovative breakfast recipes and this grilled carrot, beetroot and radish sandwich is one such recipe which I made for my fussy eater to eat some vegetables. With simple vegetables present in my fridge, I made delicious mixed vegetable sandwich. I added cheese slices in this sandwich to make it cheesy for the kid. If you are on a special diet, you can make this sandwich without adding cheese slices.

Ingredients to make carrot, beetroot and radish sandwich:
- Bread: Any type of slice bread like white bread, whole wheat bread, multigrain bread or brown bread can be used in making this delicious vegetable sandwich.
- Vegetables: Carrot, beetroot, radish and onion are the vegetables used in making this healthy sandwich.
- Cheese: I added cheese slices while assembling the sandwich. This is optional and may be added on demand.
- Butter: Little amount of butter can be applied while making the sandwich.
- Spice: Black pepper powder is added for adding the right amount of spice to the sandwich recipe.
How to make healthy breakfast sandwich?
- In a mixing bowl and add grated carrot, grated beetroot, grated radish and finely chopped onion.
- Add black pepper powder and salt to taste and mix well.
- Take a bread slice and apply butter to it. On this spread the vegetable mix.
- Place a cheese slice on top of this.
- Close this with another bread slice and apply little butter on top.
- Grill the sandwiched in a panini grill press till the topmost bread slice turns golden brown.
- Repeat the same for another sandwich.
Carrots are rich in vitamin A and are good for maintaining a healthy eyesight. Beetroot is rich in folate and vitamin C and iron and radish are rich in folate, fiber and vitamin B6.
This healthy sandwich with carrots, beets and radish is also great to make during the 6’o clock hunger pangs. You can also pack this sandwich it in yours or your child’s tiffin or snack box.
Carrot Beetroot Radish sandwich
Ingredients
- 4 bread slices
- ½ cup carrot peeled and grated
- ½ cup beetroot peeled and grated
- 1/2 medium sized onion finely chopped
- ½ cup radish peeled and grated
- 1 teaspoon black pepper powder
- 2 tablespoon butter
- 2 cheese slices
- To taste salt
Instructions
- In a mixing bowl and add the vegetables mentioned in ingredients.
- Add black pepper powder and salt to taste and mix well.
- Take a bread slice and apply butter to it. On this spread the vegetable mix.
- Place a cheese slice on top of this.
- Close this with another bread slice and apply little butter on top.
- Grill the sandwiches in a panini grill press till the topmost bread slice turns golden brown.
- Repeat the same for another sandwich.
