Ingredients:
1 cup Cornflour / 1 small packet of cornflour
2 cups sugar
3 cups water
1/4 th cup ghee
1/2 tsp cardamom powder
2 pinch sunset orange food colour
10-15 almonds,cashews and pistas
Procedure:
Fry the cashew nuts in 1 tablespoon ghee. Break them into small pieces after cooling.
Do not fry the almonds and the pistas just break them into small pieces as they are. Keep these aside.
In a heavy bottomed pan, dry roast the corn flour for 1 minute on low flame. Let it cool down.
To this add sugar,water and salt and mix properly. Ensure that there are no lumps. This mixture will be watery.
On low flame keep on stirring the mixture continuously. After 5 minutes, add the food colour and cardamom powder and continue stirring.
After some minutes you will notice that the mixture has started thickening and looks transparent. At this point, lower the gas flame.
Now add the ghee and keep st iring. Add the nuts and continue st iring till the mixture thickens and starts separating from the edges of the utensil. It will start looking like a dough.
Switch off the gas.
Grease the plate and pour the halwa on it. Let it cool down completely for atleast one hour and then refrigerate it.
Cut it into small pieces and serve.
Keeps fresh for upto 3 days in the fridge.
