Yellape is a Goan sweet dish made with jaggery, mashed banana and rava or semolina. Yellape is also known as appe or paniyaram in South India and this dish can be called as sweet appe with sooji or sweet rava appe. This appe dish is a sweet snack recipe and can be served for breakfast or evening snacks along with tea or coffee.
Apart from making banana appe, we can make other yellape or paniyaram varieties like replacing banana with jackfruit or cucumber, just like how we make cucumber cake and jackfruit cake.
Let us see the ingredients that go in making banana appe recipe:
- Semolina: Fine sooji or rava is used in this ape dish. Cracked wheat or wheat sooji (Bansi sooji) is also used in making this appe ki recipe.
- Banana: Use fresh ripe banana in this recipe. Even over-ripe banana can be used, and this is a great recipe to make use of over ripe bananas in cooking instead of discarding them. I have used 4 small bananas (yellaki or elaichi banana).
- Jaggery: Jaggery is used as a sweetener in this sweet yellape recipe. If jaggery is not available, sugar can be used.
- Coconut: Use freshly grated coconut in this recipe. If freshly grated coconut is not available, use desiccated coconut.
- Dry fruits: Cashewnuts are used in this recipe. Raisins can also be used.
- Tutti Frutti: Tutti Frutti is an optional ingredient and is added for making the sweet paniyaram colourful and attractive.
- Ghee: Little amount of ghee or clarified butter is used for greasing the appe pan.
