Doodanche fov is a Goan sweet dish made using flattened rice or beaten rice, milk and sugar. Cardamom is added for providing flavour. This sweet poha recipe with milk is usually made for Indian festivals like Diwali. During Diwali, Goans located all over the world make different types of Fov/Poha/Avalakki. One dish made during this time is Doodanche Fov or dudh poha. “Doodh” means milk and “fov” means beaten rice or poha. “Doodanche” means made in milk. This is a very simple and easy and can be made in 10 minutes.
Various types of dishes that Goans make with beaten rice are potato poha/bataat fov, buttermilk poha (takanche fov), curd poha (dhai fov), jaggery poha (godanche fov), coconut milk poha (rosanche fov), sugar poha (sakhar fov) etc. My mother in law makes all these varieties of flattened rice on Diwali day.
Along with this we also make chana oosali and hog-plum chutney. All these dishes are Diwali special dishes and usually makes a typical Goan Diwali breakfast.
Ingredients to make doodanche fov:
- Beaten rice: The star ingredient in this recipe is beaten rice or flattened rice.
- Milk: Cow’s milk can be used in this recipe.
- Sugar: For sweetness we need to add sugar in this recipe. However, if you are looking for an option to make flattened rice without sugar, you can try this jaggery poha.
- Cardamom pods: Cardamom is added to provide a flavour to the sweet dish being prepared.
Making the milk poha recipe is very easy:
- Wash and soak the beaten rice in water for 10 minutes.
- Once it softened, heat 1/2 cup water, add beaten rice to it and boil.
- Add milk and boil for 5 to 10 minutes, stirring occasionally.
- Add sugar and stir. Add crushed cardamom pods/cardamom powder and stir well.
This poha milk recipe can be made for breakfast or for evening snacks too. You need not wait for special occasion to make this dish just like coconut milk poha.
Along with poha milk recipe, many other poha varieties are cooked and kept ready right before the “Aarthi” or “Dive” as we Goans say. Soon after the “aarthi” of the men and kids in the house, the married ladies serve these poha varieties to everyone at their home.
One night before Diwali i.e. on Narka Chaturthi, we Goans get to witness the burning of demon Narkasur effigy and Narkasur competitions across the state. There are competitions held between Lord Krishna and Daemon Narkasur and Lord Krishna finally kills the demon. After the completion everyone proceeds to their homes and lights the sky lamp outside their homes.

Doodanche Fov | Flattened Rice In Milk | Dudh Poha
Ingredients
- 1 cup flattened rice poha/fov/avalakki
- 1 cup milk
- 1/2 cup water
- 1/2 cup sugar
- 1 teaspoon cardamom powder or 4 crushed cardamom pods crushed
Instructions
- Wash and soak the beaten rice in water for 10 - 15 minutes.
- Once it is soft, heat 1/2 cup water, add beaten rice to it and boil.
- Once it starts boiling, add milk and boil for 8-10 minutes stirring occasionally.
- Add sugar and stir. Add crushed cardamom pods/cardamom powder and stir well.
- Garnish with kesar ( saffron) if needed.
