This is a step by step recipe of classic fried rice which tastes like the restaurant style chicken fried rice. Whenever we crave for Chinese style chicken rice recipe, I make this easy recipe and serve it with some honey chili potatoes or paneer Manchurian. The recipe is ideal to make with day old rice.
This fried rice made with chicken is a favourite at home. I usually make different types of rice recipes and add it in the kids and husbands lunch box. Different variations from the regular recipe can be to make broccoli rice with chicken or to make tomato rice with chicken.
If you make too much of fry rice, don’t worry. Store this chicken rice in fridge for upto 2 days or it can be frozen too. Just remember to microwave or heat it before serving on the next day.
How to cook rice for making fried rice?
Rice for this recipe can be made on stove top or in rice cooker or in a pressure cooker too. Just remember that rice should be cooked aldente. That is, it should not be fully cooked. Also, after cooking rice, you should dry the rice by spreading in separate plates or spread it in colander.
Different types of vegetables like bell pepper, mushroom, carrots, cabbage, broccoli, zucchini, sweet corn, etc. can be used in making this type of Chinese recipe with chicken.

Serving fried rice with chicken:
You can serve this chicken rice recipe with manchurian or any Chinese starter. You can also serve it with sauces like dark soy sauce and green chili sauce. This recipe is ideal not just to have at home, you can even make this fool proof recipe for small home parties and get-togethers.
Ingredients to make homemade chicken stir fry rice:
- Chicken: Use tender chicken, preferably skinless and boneless. I would suggest using tender chicken breast which is marinated by applying black pepper powder, salt and sark soy sauce. Chop it into small pieces and add it to the recipe.
- Basmati rice: I like to make my rice recipes wither with basmati rice. You can try this recipe with any Asian rice too.
- Sauces: Dark soy sauce and green chili sauce are added to this recipe. What will Chinese rice recipe taste like without these two sauces?
- Garlic: Garlic is finely chopped and added while making the recipe. The aroma of garlic makes this dish yummy.
- Vegetables: Different types of vegetables like bell pepper, onion, spring onion greens, mushroom, carrots, French beans, cabbage, broccoli, zucchini, sweet corn, etc. can be used in making this type of Chinese recipe with chicken.
- Eggs: I have added some scrambled eggs in this recipe. This is optional, however scrambled eggs are recommended in any authentic Chinese fried rice recipe.
- Oil: I have added sesame oil in this Asian rice recipe. This adds a nice taste. You can use any other vegetable oil too.
- Maggi cube: I always add a Maggi cube to my Chinese style rice recipes. This is optional. You can add very less ajinomoto, but this is also optional.
Steps to make delicious chicken and scrambled egg rice Chinese style:
- Apply salt and pepper to shredded chicken and let it marinate for 30 minutes inside the refrigerator.
- Take a deep bottom utensil and add water. Add a bay leaf to water and boil rice aldente. Means the rice should not be fully cooked. After cooking rice, drain water, fluff rice and spread rice on a plate or in a colander to dry. If you have previous day’s left-over rice, you can use that.
- Take a frying pan, add 1 teaspoon oil. Add eggs, black pepper powder and pinch of salt and scramble the eggs. Keep aside in another plate.
- In the same frying pan, add 2 tablespoon oil and fry chicken pieces till they are cooked properly.
- Take a kadai or wok, add oil. When oil gets heated, add finely chopped garlic. After raw smell of garlic goes away, add chopped spring onion bulb and chopped onion and sauté till onion turns pinkish.
- Add other vegetables like capsicum, French beans, carrot and few spring onion light green part(scallion) and mix well. Cook until the vegetables become tender.
- Add green chili sauce and soy sauce and mix well.
- Mix the scrambled eggs and chicken pieces.
- Add a Maggi cube and mix well. This is optional.
- Finally add cooked Basmati rice and toss.
- Garnish with spring onion greens.

- 1 cup Chicken shredded
For marinating:
- 1/4 teaspoon black pepper powder
- 1 tablespoon soy sauce
- To taste salt
For making fried rice:
- 1.5 cups Basmati rice
- 1 capsicum sliced or julienned
- 1 carrot sliced or julienned
- 5 French beans chopped
- 1 medium sized onion finely chopped
- 2 tablespoon green chili sauce
- 2 and ½ tablespoon dark soy sauce
- 1 teaspoon black pepper powder
- 2 eggs
- 5 cloves garlic minced
- 1 chicken Maggi cube optional
- 1 bunch spring onion separate onion and green stem
- 2 tablespoon sesame oil
- To taste salt
Instructions
