But if fresh seasonal matar are not available, then you can use canned peas or frozen peas too. Just thaw the frozen peas and then use it in cooking.

How to cook fresh peas and carrots stir fry?
- Boil green peas, drain and keep aside.
- Heat a kadai or pan and add oil.
- After oil gets heated, add cumin seeds and let them crackle.
- Add finely chopped green chili and chopped ginger and fry for 30 seconds.
- Add asafoetida and fry for few seconds.
- Next is to add garam masala or kitchen king masala and fry for few seconds on low flame. Do not burn the masala.
- Add carrot, mix and cook for 5 minutes by covering the lid of the kadai or pan.
- Add boiled green peas and mix well.
- Add ¼ cup water, mix and cover and cook on low flame till carrot and peas are cooked. Do not over cook. The carrot should just turn tender.
- Add salt to taste and garnish with chopped coriander leaves.
How to make gajar matar sabzi in pressure cooker?
You can even make gajar matar ki subzi in cooker. Heat a pressure cooker, add oil and then add cumin seeds. After cumin seeds crackle, add asafoetida, green chili and ginger and mix well. Add carrots and green peas and mix well. Add garam masala, ½ cup water and pressure cook for 2-3 whistles. After pressure from cooker is released, add salt to taste and mix well. Garnish with chopped coriander leaves.
