Lychee fruit is aromatic, sweet, and slightly floral in taste with a hint of citrus. The aroma of lychee is like that of rose is what I felt like when I had it first time.

Ingredients that go in making lychee pudding easy recipe:
- Lychee: Use fresh, firm lychee to make this litchi delight. Discard any litchis which are unfresh and soft.
- Milk: I have used normal cow milk to make this lychee dessert. You can even use high fat milk. For making vegan lychee pudding, try using coconut milk instead of cow milk.
- Sugar: For adding sweetness, I have added sugar in this litchi dessert recipe. You may alter the sugar quantity depending on the sweetness of the lychee fruit.
- Cornflour: Cornflour is mixed with little water and is added to thicken the litchi pudding.
- Mint leaf: Mint leaf is optional and is only added for garnish to make the dessert look appealing.

How to make lychee pudding recipe:
- Wash and peel the litchi. Cut them into small pieces.
- In a small bowl, add cornflour and little water and make slurry.
- Add the chopped lychees in a blender and make puree.
- Heat a sauce pan and add milk.
- When the milk is about to start boiling, add the lychee puree and stir.
- Add sugar and mix well.
- Let it start boiling.
- Add cornflour slurry and mix well.
- Cook till the pudding thickens.
- Switch off the gas.
- Add some litchi pieces in a serving bowl and pour the pudding in the serving bowl.
- Cool and refrigerate for 5-6 hours or overnight.
- While serving, invert the pudding on a serving plate.
- Garnish with chopped litchi pieces and mint leaf.
- Serve cold.
