Rice paper summer rolls or rice paper spring rolls are a delicious appetizers. These are an alternative to summer salads. You can add different types of fillings to these rice paper rolls. Vegetables, herbs like mint, coriander leaves, fruits, rice noodles, meat or seafood can be added as fillings. These spring rolls are very refreshing and are a healthy way to eat vegetables, fruits or meat. Wondering how to serve rice paper rolls? Which dipping sauce to serve with rice paper rolls? I got the rice paper wrappers from amazon. Followed the instructions on the packet and I was ready to experiment a new recipe. Be careful while handling the rice papers. They are thin and can tear easily. Just submerge them in warm water for 30 seconds. Gently lift them out, spread on a clean surface, place the fillings and roll them. The end result is delicious. Just remember to serve them with different types of dips. The spicy sriracha dip is made with mayonnaise and sriracha sauce. I got the sriracha sauce from The US. Serve these rice paper rolls as starters for parties. They are easy to assemble.
I have added shrimps along with vegetables in this spring roll. You can add only vegetables and serve the spring rolls. They don’t need to be baked or steamed. Just eat them fresh. I used marinated shrimps. For marination I used turmeric powder, red chili powder and salt. You may skip this step if you cannot find the spice powders.
Shrimp Rice Paper Rolls With Spicy Sriracha Dip
Ingredients
- 8 rice paper wrappers
- 12 Shrimps
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon Salt
Vegetables used:
- 8 lettuce leaves
- 1/2 yellow bell pepper julienned
- 1/2 red bell pepper julienned
- 1/2 carrot peeled and julienned
- 1 small bunch parsley
For spicy sriracha dipping:
- 1 cup mayonnaise
- 3 tablespoon sriracha sauce
Instructions
- De-shell and de-vein the shrimps.
- Wash and marinate them by applying turmeric powder, red chili powder and salt. This step is optional.
Let us assemble the rice paper rolls with filling:
- Keep all the vegetables ready.
- Take a bowl of warm water and soak the rice paper for 30 seconds or as per instructions on the packet.
- Then remove and place the rice paper on a clean surface.
- Arrange lettuce leaf, 2 shrimps and few julienne of vegetables in the center of the rice paper.
- Fold the edges on each side first. Then roll from the remaining rice paper carefully.

Let us make the spicy sriracha dipping:
- Take a mixing bowl. Add 1 cup mayonnaise and 3 tablespoon sriracha sauce and mix well.
