Ingredients

  • 20 Shrimp peeled and deveined
  • ½ cup buttermilk
  • 1 cup all-purpose flour
  • ½ cup Bang Bang sauce
  • Lettuce for garnish
  • Spring onion for garnish
  • 2 cups oil for deep frying
  • 1 teaspoon black pepper powder
  • ½ teaspoon salt

Instructions

Prepare the shrimp:

  • Add the shrimp to a mixing bowl.
  • Pour butter milk over the shrimp and mix well.
  • Add salt and pepper, mix well, and keep aside for 20 minutes to absorb the flavours.

Coat the shrimp in flour:

  • Dip the shrimp in the flour ensuring that it is fully coated.

Heat the oil:

  • Heat oil in a large skillet over medium-high heat. You’ll need enough oil to fry the shrimp evenly, about 2-3 inches of oil.

Fry the shrimp:

  • Fry the shrimp in batches for 2-3 minutes on each side, until golden brown and crispy. Avoid overcrowding the pan to maintain crispy texture.

Drain excess oil:

  • Once fried, remove the shrimp from the oil and place them on a paper towel-lined plate to drain excess oil.

Toss in Bang Bang sauce:

Notes

  • To check if the oil is ready for deep frying, dip a dry skewer and if it starts sizzling, then the oil is ready. If the oil does not sizzle, then it is not yet ready, and you might want to heat the oil for a little, longer time before deep frying the shrimp.
  • If oil starts smoking, then its too hot and you should lower the heat before frying.
  • This method is useful when you do not have a thermometer on hand.
  • Be double careful and do not allow water or moisture near the skewer since it will cause the oil to splatter.
