Carrot Celery Soup

Carrot celery soup is a hearty and comforting vegetable soup, low in calories, made in one pot and ready under 30 minutes. This light and healthy carrot soup is delicious, vegan, easy dinner recipe and enough to keep you warm and cozy in the winter season.

Ingredients

  • 5 medium carrots peeled and chopped
  • 3 celery stems chopped
  • 1 medium onion chopped
  • 5 garlic cloves finely chopped
  • 1/2 inch ginger peeled and finely chopped
  • 4 cups vegetable stock or water
  • 1 tablespoon oregano
  • 1/2 tablespoon pepper powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • Few celery greens finely chopped

Instructions

  • Heat a pot and add oil.
  • After oil gets heated, add chopped onion and sauté till onion turns pinkish.
  • Add chopped garlic and chopped ginger and sauté till garlic turns aromatic.
  • Next step is to add chopped carrots and celery and sauté for 5 minutes till the vegetables turn tender.
  • Pour in vegetable stock or water.
  • Add the seasoning – oregano, pepper powder and salt and mix well.
  • Simmer on medium heat for 15-20 minutes.
  • Garnish with celery greens and turn off the heat.
  • Serve hot.
