Wash and pressure cook the baby potatoes. Drain the water. After cooling, peel them.
In a mixing bowl, add the spice powders namely chili powder, turmeric powder, amchur powder, garam masala, ginger garlic paste, lemon juice, salt and 2 tablespoon oil and mix well.
Apply this paste to the baby potatoes and let it marinate for 30 minutes. If you marinate for longer time, keep it in fridge.
Heat a kadai, add 2 tablespoon oil. When oil gets heated, add curry leaves.
Add the marinated baby potatoes and stir fry them for 10 minutes.
Adjust salt to taste. Remember that we had already added salt while marinating, so add salt carefully.
