Chicken fried rice is a delicious Chinese style rice which is made with chicken, eggs and vegetables like bell pepper, carrot and French beans. This is a take-out style rice and can be made with leftover rice too. Find step by step pictures to make this delicious rice recipe.

Apply salt and pepper to shredded chicken and let it marinate for 30 minutes inside the refrigerator.
Take a deep bottom utensil and add water. Add a bay leaf to water and boil rice aldente. Means the rice should not be fully cooked. After cooking rice, drain water, fluff rice and spread rice on a plate or colander to dry.
If you have previous days left over Basmati rice, you can use that.
You can even cook rice in rice cooker. But cook it with less water so that it gets cooked aldente.
Take a frying pan, add 1 teaspoon oil. Add eggs, black pepper powder and pinch of salt and scramble the eggs. Keep aside in another plate.
In the same frying pan, add 2 tablespoon oil and fry chicken pieces till they are cooked properly.
Take a kadai or wok, add oil. When oil gets heated, add finely chopped garlic.
After raw smell of garlic goes away, add chopped spring onion bulb and chopped onion and sauté till onion turns pinkish.
Add other vegetables like capsicum, French beans, carrot and few spring onion light green part(scallion) and mix well. Cook until the vegetables become tender.
Add green chili sauce and soy sauce and mix well.
Mix the scrambled eggs and chicken pieces.
Add a Maggi cube and mix well. This is optional.
Finally add cooked Basmati rice and toss.
Garnish with spring onion greens.
Notes
I always add a Maggi cube to my Chinese style rice recipes. This is optional. You can add very less ajinomoto, but this is also optional.
