Colostrum Milk Pudding | Poss | Kharwas | Junnu Sweet

Colostrum pudding also known as poss or kharwas is a Goan recipe made with cow colostrum. This is known as “keet” in Konkani and “junu”in Kannada. This is a Goan traditional kharwas recipe. Healthy pudding is made by steaming.

Ingredients

  • 1 cup colostrum
  • ½ cup coconut milk
  • 3 tablespoon grated jaggery
  • 1/4 teaspoon cardamom powder/ 5 cardamom pods crushed
  • 1 turmeric leaf optional
  • A pinch turmeric powder

Instructions

  • Mix all the Ingredients except turmeric leaf in a deep bottom bowl and stir till jaggery melts.
  • Add the turmeric leaf. Addition of turmeric leaf is optional.
  • Steam / pressure cook it by using the double boiler method.
  • Cool down completely and then refrigerate the container with steamed pudding.
  • Use a knife and run it on the edge of the container which was used for steaming.
  • Invert on a plate. Serve chilled.

Notes

  • Double boiler method is similar to steaming idlis where you keep the container with the batter in a pressure cooker in which there is little water.
  • You should not put on the whistle and only steam for 20-30 minutes.
