Cowpea Beans Subzi | Valachi Bhaji | Chawli Subzi

Cowpea Beans Subzi is a stir fry made with cowpea green with onion,tomato and some spices. This is a vegan and gluten free stir fry.

Equipment

  • Pressure cooker
  • Kadai / wok

Ingredients

  • 3 cups chopped cowpea beans
  • 1 medium sized onion finely chopped
  • 1 medium sized tomato finely chopped
  • 2 green chilles
  • 10 curry leaves
  • 1 teaspoon mustard seeds
  • 2 tablespoon grated coconut
  • 1 teaspoon jeera / cumin seeds
  • 1 teaspoon turmeric powder
  • Pinch asafoetida
  • 1/2 cup water
  • 2 teaspoon oil

Instructions

  • Pressure cook the cowpea beans for one whistle keep aside. You can also boil this in enough water.

For seasoning:

  • In a kadai/pan, add 2 teaspoon oil. After oil gets heated, add mustard seeds and cover the kadai.
  • After the mustard flutters, add cumin seeds.
  • Then add asafoetida, curry leaves and green chillies.

For making subzi:

  • Add onion and fry till it becomes pinkish.
  • Add tomato and sauté till tomato becomes mushy.
  • Then add the pressure-cooked cowpea and let it simmer for 10 minutes.
  • Garnish with grated coconut. This is optional.

Notes

Instead of green chillies, 1 teaspoon of red chilli powder can also be added. Addition of tomato and garnishing with coconut is optional.
