Gajar Matar Sabzi

Gajar matar sabzi is a simple, tasty, vegan, no onion no garlic and easy stir fry made with fresh seasonal carrots and green peas. This vegan gajar matar sabzi is a winter recipe usually prepared in North India. If you are looking for carrot sabzi for roti, then this carrot peas dry curry is a must try. Ingredients

  • ½ cup green peas
  • 2 carrots peeled and cut into 1/2 inch pieces
  • 1 green chili finely chopped
  • ½ inch ginger peeled and chopped into small pieces
  • 1 teaspoon cumin seeds
  • 1 teaspoon asafoetida/hing
  • 1 teaspoon garam masala/Kitchen king masala
  • 1 tablespoon oil
  • Few coriander leaves finely chopped
  • ½ teaspoon salt or as per taste
  • 1/4 th cup water

Instructions

  • Boil green peas, drain and keep aside.
  • Heat a kadai or pan and add oil.
  • After oil gets heated, add cumin seeds and let them crackle.
  • Add finely chopped green chili and chopped ginger and fry for 30 seconds.
  • Add asafoetida and fry for few seconds.
  • Next is to add garam masala or kitchen king masala and fry for few seconds on low flame. Do not burn the masala.
  • Add carrot, mix and cook for 5 minutes by covering the lid of the kadai or pan.
  • Add boiled green peas and mix well.
  • Add ¼ cup water, mix and cover and cook on low flame till carrot and peas are cooked. Do not over cook. The carrot should just turn tender.
  • Add salt to taste and garnish with chopped coriander leaves.

Notes

The recipe can also be made with frozen peas. Just thaw before using them.
