Goan Pumpkin Subzi | Dudyachi Bhaji

Pumpkin Subzi Goan style also known as dudyachi bhaji is a zero oil, under 20 minutes easy and healthy recipe made with red or yellow pumpkin.

Equipment

  • Kadai / wok

Ingredients

  • 2 cups pumpkin peeled and chopped into cubes
  • 1 medium sized onion finely chopped
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 4 tablespoon coconut freshly grated
  • ¾ cup water
  • To taste salt

Instructions

  • Heat a kadai/wok, add all the ingredients one by one. That is add peeled and chopped pumpkin, finely chopped onion spice powders, grated coconut, little salt and water.
  • Mix well and let it simmer with lid closed.
  • All water in kadai should get absorbed and the pumpkin should turn soft.
    If the pumpkin is still hard, add more water ands immer. Remember not to add too much water as pumpkin will turn mushy.
    I suggest adding water little at a time and cooking with lid covered.
  • Adjust salt to taste.
