Goan Style Okra Stir Fry

Goan style okra stir fry, also known as Goan lady finger stir fry or bhendyachi bhaji, is a simple and easy recipe. If you are wondering whether you can add okra to stir fry, the answer is yes! This delicious okra stir fry can be made with just a few simple ingredients available in your pantry.

Ingredients

  • 250 grams okra
  • 1 medium onion finely chopped
  • 2 green chilies slit
  • 1 teaspoon mustard seeds
  • 6-8 curry leaves
  • 2 tablespoon coconut grated
  • 4 kokum petals
  • 2 tablespoon oil
  • ¼ teaspoon salt or as per taste

Instructions

  • Wash and dry the lady fingers. Chop the head and cut into slices.
  • Heat a kadai and add oil.
  • After oil gets heated, add mustard seeds, and let them flutter.
  • Add curry leaves and fry for few seconds.
  • Add finely chopped onion and sauté till onion turns pinkish.
  • Next, add chopped okra or ladyfingers and stir well.
  • Add salt and stir. Addition of salt ensures that okra gets cooked faster.
  • Add kokum petals, slit green chilies, and stir.
  • Addition of kokum petals removes the sliminess of okra, imparts flavour and colour.
  • Cover and cook for 3-4 minutes on medium flame. Also stir occasionally to ensure that okra does not stick to the bottom.
  • Add grated coconut and mix well.
  • Cook till okra is soft and tender.
  • Delicious Goan style okra stir fry is ready. Serve hot.

Notes

Tips to ensure that okra does not get slimy and sticky while cooking:
  • Always wash okra and pat dry using a kitchen towel.
  • Addition of souring agent like kokum also known as Garcinia indica in English removes sliminess of ladyfingers.
  • You may add lime juice if kokum is not available.
  • If you have an air fryer, just air fry okra for few minutes and then add it to kadai after sauteing onions to make this stir fry. This will also remove the sliminess. But ensure that you chop the okra at least ½ inch in size else it will turn dry and crisp.
