Malabar Spinach Stir Fry
Malabar spinach stir fry also known as vaalchi bhaji in Goa and basale soppu in Karnataka is a healthy vegetarian recipe. I like to make spinach stir fry for lunch. This healthy zero oil recipe is a keeper.

1 bunch vaalchi bhaji/ Malabar spinach / Basale leaves 1 medium sized onion finely chopped 1 tablespoon jaggery grated 1 teaspoon turmeric powder 1 teaspoon red chili powder 2 tablespoon coconut grated To taste salt
Remove the leaves from the stem and wash them multiple times. Chop it into small cubes.
Take a kadai/skillet and add chopped greens, onion, grated coconut and jaggery.
Add 1 cup water to it and switch on the gas or heat.
After 10 minutes, mix all the contents of the kadai and let it cook further for 10 minutes.
Add turmeric powder and red chili powder and mix well.
Cook covered till all water gets absorbed.
Add salt to taste and mix well.
