Malabar Spinach Stir Fry

Malabar spinach stir fry also known as vaalchi bhaji in Goa and basale soppu in Karnataka is a healthy vegetarian recipe. I like to make spinach stir fry for lunch. This healthy zero oil recipe is a keeper.

Ingredients

  • 1 bunch vaalchi bhaji/ Malabar spinach / Basale leaves
  • 1 medium sized onion finely chopped
  • 1 tablespoon jaggery grated
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 2 tablespoon coconut grated
  • To taste salt

Instructions

  • Remove the leaves from the stem and wash them multiple times. Chop it into small cubes.
  • Take a kadai/skillet and add chopped greens, onion, grated coconut and jaggery.
  • Add 1 cup water to it and switch on the gas or heat.
  • After 10 minutes, mix all the contents of the kadai and let it cook further for 10 minutes.
  • Add turmeric powder and red chili powder and mix well.
  • Cook covered till all water gets absorbed.
  • Add salt to taste and mix well.
