Mango Shrikhand Made From Spoilt Milk

Ingredients

  • 6 packets milk which has spoilt while boiling
  • 1 ripe mango pureed
  • 1 cup sugar powdered
  • 4 cardamom pods peeled and crushed
  • Few strands saffron (kesar)
  • 2 tablespoon milk warm

Instructions

  • While boiling milk, if milk goes spoilt then switch off the gas and let it cool down.
  • Spread a muslin cloth on a deep utensil and pour the spoilt milk on it.
  • Let the whey get drained. Collect the spoilt milk in the muslin cloth and tie it. Collect the milk solids in the tied cloth.
  • Tie for 6-8 hours till all the whey get drained.
  • In a small bowl, add 2 tablespoon warm milk. To this add saffron strands and let the colour of saffron get infused in the warm milk
  • Add the milk solids(chena or paneer) in a bowl and using the hand blender, blend well.
  • Add the mango pulp and again blend.
  • Add powdered sugar and mix. Blend using the blender.
  • Add crushed cardamom and mix.
  • Add the warm milk with saffron strands and mix well.
  • Refrigerate and serve chilled.

Notes

Note:
  • If you don’t have hand blender, use a whisk or egg beater.
  • You can even try using a mixer.
