Mexican Corn And Bell pepper Salsa

Mexican Corn bell pepper salsa is a healthy and nutritious Mexican dish made with corn and bell pepper. Bell peppers of different colours, red onion, tomato and sweet corn is mixed along with lime juice and spicy jalapeno peppers. This Mexican corn salsa with bell pepper is perfect to serve on top of tacos, enchiladas, inside quesadillas, tortilla chips, nacho chips and as a topping on Mexican pizza.

Ingredients

  • 1 cup yellow corn kernels
  • 1 medium sized onion finely chopped
  • 1 medium sized tomato finely chopped
  • 1/2 green bell pepper finely chopped
  • 1/2 yellow bell pepper finely chopped
  • 1/2 red bell pepper finely chopped
  • 1/2 lime juice or 2 tablespoon lime juice
  • 2 jalapeño pepper seeds removed and diced
  • 1/2 teaspoon black pepper powder
  • 1/2 tablespoon olive oil
  • 1/4 cup coriander leaves finely chopped
  • 1/4 teaspoon salt

Instructions

  • Boil the corn kernels by adding 3 cups water for 10 minutes. Drain the water. You can steam or grill the corn too.
  • In a mixing bowl, mix all chopped the vegetables like red onion, coloured bell peppers and tomato.
  • Garnish with chopped coriander leaves, lime juice, olive oil, black pepper powder and salt.
  • Serve this Mexican corn salsa as side dish for lunch. You can also have them as a healthy snack.
