Noodle Cutlets

Noodle cutlets is a delicious recipe usually made for breakfast, lunch or snacks. Noodles are cooked, mixed with vegetables, sauce, spices and flour and are pan fried or shallow fried. These can also be made with leftover noodles or spaghetti and is a great option for evening snacks with noodles.

Ingredients

  • 1 packet noodles of any brand
  • 1 medium sized onion finely chopped
  • 1 small carrot peeled and finely chopped
  • ½ capsicum finely chopped
  • 1 to mato chopped
  • 2 tablespoon spring onion greens finely chopped
  • 2 tablespoon chopped coriander leaves
  • 1 teaspoon black pepper powder
  • 1 teaspoon coriander powder
  • 3 tablespoon cornflour
  • 2 tablespoon oil for shallow frying
  • To taste salt

Instructions

  • Cook noodles as per package instructions.
  • Take a mixing bowl, add noodles and all the vegetables.
  • Add the black pepper, coriander powder and salt and mix well.
  • To bind add cornflour, 1 tablespoon at a time and mix well.
  • Roll into balls and flatten these as cutlets and keep them on a plate. If your hands get sticky, simply dip it in water before rolling every cutlet.
  • Heat a frying pan and drizzle oil.
  • One by one place the cutlets on the frying pan and shallow fry them on both sides till they turn brownish.
