Spaghetti Pasta With Zucchini And Mushroom

Spaghetti pasta with mushroom and zucchini is an easy pasta recipe which gets ready in under 30 minutes. This spaghetti pasta veg is made with tomatoes, zucchini and mushroom and is bursting with flavours of garlic and pepper. Creamy mushroom and zucchini pasta can be made for regular weeknight dinners.

Ingredients

  • 260 grams spaghetti pasta or ½ packet regular pasta
  • 15 cherry tomatoes halved
  • 1 medium sized zucchini sliced
  • 200 grams button mushrooms sliced
  • 5 garlic cloves minced
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 tablespoon oregano
  • 1 tablespoon black pepper powder
  • ½ cup parmesan cheese
  • 1/2 teaspoon salt or as per taste

For creamy pasta sauce:

  • ¼ cup milk
  • 2 teaspoon red chili flakes
  • 1 tablespoon apple cidar vinegar
  • 1 tablespoon corn starch

Instructions

  • Boil water by adding ½ teaspoon salt. Add pasta and cook al dente as per package instructuons.
  • Drain and keep aside. While draining, reserve 1 cup water to use later while cooking pasta with vegetables.
  • In a saucepan, add butter and olive oil. After butter is melted, add garlic, and mix for few seconds. Take care not to burn garlic.
  • Add oregano, mix and sauté for few seconds.
  • Add mushrooms and sauté till mushroom turns soft and releases water.
  • Add sliced zucchini, chopped cherry tomatoes, salt and pepper powder and mix well.

Let us prepare the creamy pasta sauce:

  • In a small mixing bowl, add milk, corn starch, chili flakes and apple cider vinegar and mix well.

Prepare the easy spaghetti pasta:

  • Pour this sauce into the pan in which vegetables are getting sautéed and mix well. Add more salt and pepper if needed.
    If you need spicier, add some more red chili flakes.
  • Now add the drained spaghetti pasta, ¼ cup reserved water and mix well. Add parmesan cheese and too. Let the sauce coat the pasta nicely.
  • Garnish with basil leaves, red chili flakes and serve.

Notes

  • Instead of apple cider vinegar, lemon juice can be used.
  • Other vegetables like broccoli, asparagus and peas can be added.
