Wash and chop the spinach into small pieces. Microwave it for 1 minute.
Now break the eggs one by one into a mixing bowl.
Beat them nicely with a spoon till they look fluffy.
Add turmeric powder and red chili powder. Mix well.
Add the chopped spring onion stems and mix.
Add the microwaved chopped spinach, milk and salt to taste and mix well.
Heat a frying pan and spread oil.
After oil gets heated, add the egg mixture and move the frying pan so that the egg mixture spreads in all directions.
If the spinach and spring onions might get accumulated at one place, take a spoon and spread it around.
Close the lid of the frying pan and let it get cooked for 8 minutes. Keep checking in between.
After 8 minutes, flip the omelette to the other side and cook for 3 more minutes or till it is done.
Switch off the gas and let it be on the frying pan for 1 minute.
Then transfer it to the plate.
