Spinach Omelette

Spinach Omelette or palak omelet is a healthy and nutritious recipe. A bunch of chopped spinach leaves, spring onion stems and whole eggs are whipped up to make this omelette. This is then spread on a frying pan and cooked completely. The recipe is easy to cook and it takes just 15 minutes. You just need a big frying pan.

Ingredients

  • 2 eggs
  • 1 bunch spinach 20 leaves
  • 5 spring onion stems exclude the top greens
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/4 teaspoon salt
  • 2 tablespoon milk
  • 1 tablespoon olive oil

Instructions

  • Wash and chop the spinach into small pieces. Microwave it for 1 minute.
  • Now break the eggs one by one into a mixing bowl.
  • Beat them nicely with a spoon till they look fluffy.
  • Add turmeric powder and red chili powder. Mix well.
  • Add the chopped spring onion stems and mix.
  • Add the microwaved chopped spinach, milk and salt to taste and mix well.
  • Heat a frying pan and spread oil.
  • After oil gets heated, add the egg mixture and move the frying pan so that the egg mixture spreads in all directions.
  • If the spinach and spring onions might get accumulated at one place, take a spoon and spread it around.
  • Close the lid of the frying pan and let it get cooked for 8 minutes. Keep checking in between.
  • After 8 minutes, flip the omelette to the other side and cook for 3 more minutes or till it is done.
  • Switch off the gas and let it be on the frying pan for 1 minute.
  • Then transfer it to the plate.

Notes

Serve this omelette with bread or chapati.
Place it inside a wrap and pack it in your kid’s snack box.
If you don't have a big frying pan, prepare 2 omelettes by cooking half the quantity at a time.
