Sprouted green gram and cherry tomato stir fry is a healthy and nutritious recipe which can be made in just 15 to 20 minutes. Green gram or mung beans sprouts are stir fried with fresh cherry tomatoes. Serve this sprouted moong recipe for breakfast or for any meal as a side dish.
Heat a kadai/wok and oil. When the oil gets heated add curry leaves and fry for 1/2 minute.
Add the chopped onion and sauté till the onion turns pinkish.
Add chopped cherry tomatoes and fry for 5 minutes.
Mix the sprouted green gram or moong sprouts and stir and fry for 5 minutes only.
Here, I am not frying the sprouts for too long, as frying sprouts too long loses its nutritional value. I am frying it for just 5 minutes on low flame by keeping the lid covered.
Next step is to add the chilli powder and turmeric powder and mix well.
Add lemon juice, salt to taste and mix well.
Garnish with chopped coriander leaves.
Notes
Do not fry the sprouts for too long as they lose the nutritional value. Just fry it for 5 minutes on low flame.
The same recipe can be made with any type of sprouts.
