Vada pav is also known as Indian burger and is a popular street food in Maharashtra. Vada pav is a simple recipe in which a deep fried spicy potato dumpling is placed inside bread and is served with different types of chutneys.

5laadi pav / bread
For Green Chutney:
1cupcoriander leaveschopped
3garlic cloves
1teaspoontamarind pulp
2green chillies
Salt to taste
For garlic chutney:
4tablespoonchopped garlic cloves
1/4cupdried grated coconut
3tablespoonred chili powder
To tastesalt
For Fried Green Chilies:
10Green Chillieswith stem intact
2pinchessalt
1/2cupoil for deep-frying
Instructions
Let us keep the various ingredients ready:
Pav:
You can get laadi pav from bakery or store. Else you can follow my pav recipe and bake bread at home.
Vadas:
Prepare the vadas. Follow this bataat vada recipe of mine to prepare crispy vadas.
Green chutney:
Add all ingredients for green chutney mentioned in ingredients in a blender along with 2 tablespoon water and make a thick chutney or paste. Keep aside.
Red garlic chutney:
Heat a kadai and add oil.
Add chopped garlic and sauté till garlic releases nice aroma.
Add dried grated coconut and mix well. Switch off the gas.
Add red chili powder and salt and mix.
After cooling, add it to mixer and dry grind.
If it remains after using, you can store in an air-tight container and keep in fridge.
Deep fried green chillies:
Slit the green chilies, keeping stem intact.
Apply salt and keep aside for 10 minutes.
Heat a kadai and add 1/2 cup oil.
After oil gets heated, deep fry the green chillies one by one.
Finally let's assemble vada pav:
Slit the laadi pav.
Apply 1 tablespoon green chutney. Next sprinkle 1 tablespoon garlic powder.
Keep the bataat vada and apply 1 teaspoon garlic chutney.
