Veg Ramen Noodles Stir Fry

Veg Ramen Noodles stir fry recipe is a spicy vegetarian ramen and is the best ramen noodle recipe you will ever find. This easy ramen recipe gets ready under 20 minutes from start to finish and is perfect for a quick lunch or dinner.

Ingredients

  • 2 blocks of ramen noodles
  • 5 garlic pods minced
  • ½ inch ginger peeled and chopped
  • 1 medium sized red onion julienne
  • ½ medium sized green bell pepper julienne
  • ½ medium sized red bell pepper julienne
  • ½ cup broccoli florets
  • ¼ cup carrot julienne
  • ½ cup mushroom sliced
  • Few spring onion greens for garnish
  • 2 tablespoon sesame oil
  • To taste salt

For the sauce:

  • 1 teaspoon sriracha sauce
  • 1 tablespoon dark soy sauce
  • ½ teaspoon light soy sauce
  • ½ teaspoon black pepper powder or as per taste
  • ¼ inch ginger crushed to make paste
  • 1 teaspoon garlic paste
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil

Instructions

First let us prepare the ramen noodle stir fry sauce:

  • In a small mixing bowl, add all the ingredients needed to make the sauce and keep it aside.

Let us prepare the ramen noodles:

  • Boil the ramen noodles as per the packet instructions( around 2 mins), drain and keep aside.
  • Heat a pan or skillet and add oil. After oil gets heated, add garlic and ginger. After garlic becomes aromatic, add onion, and cook till onion becomes pinkish.
  • Add the vegetables namely green bell pepper, red bell pepper, broccoli and carrot and mix well. Cook till vegetables are slightly softened (for around 2 minutes).
  • Add sliced mushroom and cook till mushrooms are cooked.
  • Add the prepared sauce and mix well.
  • Next step is to add boiled instant ramen noodles, salt to taste and toss.
  • Garnish with spring onion greens.
  • Serve hot.
