Boil the ramen noodles as per the packet instructions( around 2 mins), drain and keep aside.
Heat a pan or skillet and add oil. After oil gets heated, add garlic and ginger. After garlic becomes aromatic, add onion, and cook till onion becomes pinkish.
Add the vegetables namely green bell pepper, red bell pepper, broccoli and carrot and mix well. Cook till vegetables are slightly softened (for around 2 minutes).
Add sliced mushroom and cook till mushrooms are cooked.
Add the prepared sauce and mix well.
Next step is to add boiled instant ramen noodles, salt to taste and toss.
Garnish with spring onion greens.
Serve hot.
